Our Homemade Granola.

Ingredients
400g oats
80g pepitas (pumpkin seeds)
60g almonds (raw)
40g sunflower seeds
30g macadamias (raw)
30g hazelnuts (blanched)
4g ground ginger (or 1/2 tsp)
4g ground cardamon (or 1/2 tsp)
4g allspice (or 1/2 tsp)
4g ground coriander (or 1/2 tsp)
80g brown sugar (or granulated sugar alternative)
50g honey (or maple syrup)
50g coconut oil
50g dried cranberries
50g dried dates (roughly chopped)
50g dried figs (roughly chopped)
25g dried pear (or another dried fruit)
handful of linseeds (optional)
Recipe
Preheat oven to 180 degrees and line a large, rimmed baking pan/tray with baking paper
Combine the oats, nuts, seeds, salt, spices, salt and sugar in a large mixing bowl. Mix well.
Add in the oil and honey. If using coconut oil, you can warm it up for easier mixing.
Mix well until oats and nuts are thoroughly coated.
Pour the granola into your prepared tray and spread evenly with a large spoon.
Bake until golden for about 21 to 24 minutes. Stir at about 11 minutes.
Take out of the oven and mix in dried fruit and linseed
For extra-clumpy granola, press the granola down with your spatula to create a more combined layer.
Let the granola cool completely, undisturbed for at least 45 minutes. The granola will further crisp up as it cools.
Break the granola into pieces with your hands if you want big chunks, or stir with a spoon if you want smaller pieces.
Store the granola in an airtight container at room temperature.
